Sadlers Smokehouse,
Ltd Announces Major Technology Investment: 4 weeks
following the acquisition of Sadlers, the ownership
group has committed to a multi million dollar investment
in state of the art high pressure pasteurization technology
from for its large east Texas production facility.
This technology moves Sadlers to the forefront in
food safety and shelf life amongst its peers in fully
cooked meats and meals.
High pressure pasteurization
technology, or HPP, uses a patented system of high
pressure around a fully enclosed package to kill food
pathogens that can cause safety, taste or shelf life
issues. Sadlers previously relied only on traditional
high temperatures and other protocols to assure the
safety of its products. Industry analysts generally
regard the addition of this new system to existing
measures as best in class for food safety and shelf
life, although it remains very expensive.

The unit is projected to be installed and begin commercial
production by May 1,, 2008.
